Nutella thumbprint cookies


 

I thought it would be fun to make these yummy Nutella thumbprint cookies look like pineapple tarts. :) "Thumbprint" cookies are so named because the little hole in the middle of each is traditionally made by pressing with the thumb. The hole is then filled with a delicious sweet filling.

Closer inspection will reveal that the generous dollop in the middle of each "pineapple tart" is really Nutella - that chocolate-hazelnut paste so many of us have loved from childhood!

The cookie base may also look like a crumbly pineapple tart, but don't be fooled, because this cookie is crisp and biscuit-like in texture. It's made with real butter and pure vanilla extract. Less sugar is added so that it doesn't compete with the taste of the pure Nutella filling.
